Black Pepper Spare-ribs
Ingredients:
  1. 500 g spare-ribs
  2. 2 tbsps soy sauce
  3. 3 tbsps cornflour

Seasoning:
  1. 1 ½ tbsps black pepper
  2. 1 tbsp fermented black beans
  3. 2 tbsps chooed spring onions
  4. 1 tbsp chooed ginger
  5. 1 tbsp chooed Garlic
  6. 1 tsp chooed chillies
  7. 2 tbsps soy sauce
  8. ½ tsp sesame oil
  9. 1 tbsp sugar

Method:
•    Rinse spare-ribs, drain, pat dry, combine with soy sauce and cornflour and let stand for 30 minutes.
•    Heat oil in wok and deep-fry spare-ribs until golden brown. Remove and drain.
•    Mix Seasoning and minutes well with spare-ribs. Let stand for 30 minutes or longer. Steam for 1 hour. Remove and serve.
