Chicken Curry

Chicken Curry
Ingredients:
2 chicken things
2 potatoes
½ carrot
1 onion
1 tbsp minced garlic
1 tsp minced ginger
1 tbsp chilli paste
60 g meat curry powder
2 tsps sugar
1 tsp salt

Method:
•    Rinse chicken and chop into small pieces. Peel and slice onion. Peel potatoes and carrot. Quarter potatoes and cut carrot into sections. Add water to curry powder to form a paste.
•    Heat 4 tbsps oil in a wok. Sauté onion, garlic and ginger until fragrant. Add chilli paste and curry paste. Stir-fry until fragrant.
•    Add chicken and stir well. Add potatoes, carrot and 6 cups water. Bring to a boil, reduce to low heat and cook for 25-30 minutes or until the chicken is tender. Add sugar and salt. Dish up and serve.
