Ingredients:
1 half-ripe papaya
5 cloves garlic
5 shallots
5 red chillies
5 sprigs coriander
2 lemons
Seasoning:
3 tbsps salt
4 tbsps sugar
A few drop of sesame oil
Method:
• Peel papaya, remove seeds and cut into thin slices. Chop garlic, chillies, shallots and coriander. Squeeze lemon juice.
• Mix well papaya slices with salt, marinade for 30 minutes and drain. Add garlic, shallots, chillies, coriander, lemon juice and sugar. Stir well, place in a container and refrigerate for 24 hours. Ready to serve.
• Drizzle a few drops of sesame oil over the dish before serving.
