Stuffed Pickled Cucumber
1 bunch chives
2 cloves garlic
20 g ginger
2 tbsps minced red chillies
1 tsp salt
1 tbsp sugar
• Rinse cucumber. Cut of both ends. Cut into 3 sections. Cut out a wedge about 2/3 deep from each section.
• Clean chives, remove lower hard stems and section. Mince garlic and ginger. Combine chives, garlic and ginger with Seasoning, add a little water and stir well. Stuff the mixture into the V-shaped opening, of the cucumber and serve.
• For a more sour taste, keep the cucumbers in an air-tight container. Let stand for 1 day, then tore in the refrigerator.
