Ingredients:
300g chicken wings
1 tbsp minced spring onions
1 tbsp minced ginger
1 tbsp minced gsrlic
A little cornflour solution
Seasoning:
½ tsp chilli powder
½ tsp Szechuan pepper
1 tsp sugar
1 tbsp vinegar
1 tbsp soy sauce
Method:
• Rinse chicken wings and halve. Blanch in boiling water, remove, rinse and drain. Mix well with 1 tbsp soy sauce and set aside.
• Heat 3 tbsps oil in a wok, deep-fry chicken until slightly golden brown, remove.
• Heat 1 tbsp oil and quick-fry over high heat, minced spring onions, ginger and garlic until fragrant. Add chicken and a little water, stir briefly. Add Seasoning and cook until chicken pieces are tender. Thicken with cornflour solution, dish up, garnish with green vegetables and serve.
